Rainbow Tie Dye Snickerdoodles

Directions:

  1. Using a stand up mixer, beat the butter, sugar, vanilla, and cinnamon until light and fluffy, (about 3-4 minutes).

  2. Slowly add flour, cream of tartar, baking soda, and salt. Mix at a low speed just to combine fully.

  3. Divided the dough into 6 (somewhat) equal parts and place each in a bowl.

  4. Use food color to color the dough, any colors you choose! The brighter the better!(You can just stir it in with a spoon so you don't overmix the dough.)

  5. Cover or wrap colored dough pieces and chill in the fridge for 30 minutes to 2 hours.

  6. When you are ready to bake the cookies, preheat the oven to 375 degrees F. Prepare a cookie sheet with parchment paper. Put about 1/2 cup of sugar in a small bowl and set next to cookie sheet.

  7.  Roll each color of dough into a long log. Lay each log against each other forming one big long "rainbow caterpillar" of cookie dough.

  8. Tear off a palm sized piece of cookie dough, trying to gather all different colors at once. Roll this into a ball shape. Roll each ball into the bowl of sugar set aside and place on prepared cookie sheet.

  9. Bake for 6-8 minutes, until just beginning to brown on the edges but while still soft in the middle.

  10. Cool slightly and remove to a cooling rack to cool completely. You can store these in an airtight container for 2-3 days. ENJOY!!
